John Calvin - Chef and Owner
Born and raised in Kansas City, chef/owner Jon Calvin's love of food was built from his Mother's dedication to home cooked meals.
The many barbecue houses in his hometown along with the annual American Royal Barbecue competition stoked the fire and he headed west to attend the Western Culinary Institute in Portland, OR after graduating from the University of Kansas in 2002.
He moved to Bend in 2005 and he has subsequently worked as Chef of 2 local restaurants, Executive Chef of Mt. Bachelor as well as Chef Instructor at The Cascade Culinary Institute.
Chef Calvin's vision of Craft Kitchen and Brewery (opened June 2015) is to use the highest quality ingredients with time-honored classic preparations as an alternative to the typical burgers and fries brewpub fare.
His smoked brisket is an homage to the traditional Kansas City style and is smoked fresh for every meal period. His menu is designed to share and the vision is that all of the food will be tried and enjoyed by everyone at the table just as Mom would have it.
